Gordon Ramsay Doesn't Skimp On Butter For His Juicy Burger Hack
By JESSIE MOLLOY
Gordon Ramsay shares in a YouTube video that, before forming his burger patties, he grates blocks of frozen butter and mixes it into the meat with an egg yolk as a binding agent.
As the burgers cook, the butter melts into the meat, creating savory, juicy flavors. “We get that nice, rich, buttery, smooth flavor inside that delicious burger,” Ramsay explains.
Ramsay also bastes his burgers with melted butter while they cook on the hot grill, a method that is used at the acclaimed Gordon Ramsay Burger restaurants.
Once the burger is mostly cooked and the cheese is put on, Ramsay takes chopped butter, puts it on the griddle next to the burger, and covers the burger and butter with a pot.
The pot traps the heat and steams the burger with the melting butter to help melt the cheese faster and keep the meat from drying out.
