A small amount of brown sugar tenderizes and caramelizes the meat, creating a rich brown color and a slightly crisp exterior while maintaining juiciness.
Use only a ½ teaspoon of brown sugar mixed with your other seasonings to avoid overpowering the flavors and to minimize the chance of the sugar burning.
Brown sugar also pairs well with warming spices like cumin and smoked paprika, as well as bright flavors such as apple cider vinegar and lime.
