Chopped kalamata olives are packed with umami, while crumbled feta is salty, sour, and savory, giving the guacamole a delightfully sharp flavor and extra creaminess.
You should also swap out the Mexican citrus, peppers, and herbs with Mediterranean counterparts. Try lemons, roasted red peppers, and parsley instead.
Because olives, roasted red peppers, and feta come in jars or containers full of preservative liquids, it's important to drain the liquid completely before adding them to guacamole.
