Giada De Laurentiis' Fall Potato Salad Is Nothing Like The Picnic Classic

Potato salad is commonly made of boiled potatoes in a mayonnaise-based dressing, with additions including celery, pickled relish, hard-boiled eggs, peppers, and more. However, Food Network's Giada De Laurentiis took this traditional dish outside of the box for a potato salad that's perfect for the fall and winter season.
Giadzy, an Italian-inspired grocery store account owned by De Laurentiis, posted the celebrity chef's unique salad recipe. She combines champagne vinegar, orange juice, citrus zest, olive oil, salt, and pepper for the vinaigrette, then tosses it with roasted baby potatoes, arugula, orange, gorgonzola, and toasted chopped walnuts.
The crispy potatoes in the salad add crunch, the olive oil and gorgonzola cheese add richness, acidic orange segments and champagne vinegar balance out the taste, salt enhances the flavors, and arugula adds a pop of vibrant color. This is one potato salad that should go beyond a picnic and onto your holiday dinner table.
