Forget Meat, Barbecued Beets Are All You Require At A Vegan Cookout

Being a vegan doesn’t mean you have to miss out on delicious barbecued food. Beyond the standard veggie kebabs, throw some beets on the grill for a substantial summer dinner.
While beets are a common element in vegan recipes, they are just as delicious when eaten on their own. This is especially true if you soak them in a tasty marinade.
Try soaking meaty slices of beets or peeled, halved beets in balsamic vinegar for 30 minutes to an hour, which imparts a tangy and rich flavor to the earthy and sweet vegetable.
Garlic, rosemary, thyme, and basil are also fantastic additions to a beet marinade. Once the soaking time is up, char the beets on both sides on a hot grill.
You can serve the sliced beets between two buns, toss them into a summer salad, or eat them on their own like a steak with an extra drizzle of balsamic vinegar.
