Forget French Toast, Mascarpone Will Satisfy Your Breakfast Sweet Tooth
BY VANESSA NIX ANTHONY
Mascarpone is an Italian cheese that rides the line between sweet and savory, making the possibilities for mascarpone toast variations nearly endless.
Although sometimes referred to as Italian cream cheese, mascarpone has double the fat of cream cheese, resulting in a richer, creamier taste that is less tart.
Bread plays a big part in this recipe, and some of the best options include French baguette, sourdough, ciabatta, cinnamon-raisin bread, and a lightly toasted everything bagel.
For a sweet dish, spread mascarpone onto the toast and add a bit of jam or fresh berries. Alternatively, try adding ripened peaches, a drizzle of honey, and pistachios or almonds.
Top your mascarpone with a poached or scrambled egg, salt, pepper, and chives for a savory bite. Try upgrading avocado toast with mascarpone, tomatoes, and caramelized onions.
You could also try roasted garlic, olive tapenade, anchovies, pickled veggies, and herbs. Add slices of prosciutto, cantaloupe, fresh fig, or a drizzle of date caramel.
