Pounding, breading, and frying a chicken cutlet for chicken Parmesan can be a lot of work, which is why you may want to use chicken meatballs instead for a tasty yet simpler twist.
To make easy meatballs, mix ground chicken with a few eggs as a binding agent, plus seasonings that will play well with your recipe, and form the mixture into spheres.
Instead of just spreading tomato sauce on top, you can cook the meatballs in the sauce as it simmers, which will cut down on time and dirty dishes and maximize flavor.
After the meatballs and sauce are finished, bake them briefly with mozzarella and Parmesan on top. This recipe is even faster with jarred pasta sauce and frozen chicken meatballs.
