For The Sweetest Pineapple, Put It In The Oven
BY JAVARIA AKBAR
If a pineapple you've bought is too tart, you can sweeten it by baking it in the oven. Baking concentrates and intensifies the sugars in the fruit, turning it into a honeyed treat.
Simply place the entire fruit, including the leaves, directly on the center rack of a preheated oven at a low 225 degrees Fahrenheit. Be sure to remove any produce stickers first.
Bake it for 20 minutes before removing it with oven mitts and placing it on a cooling rack. Once it’s cooled, prep and slice it by removing the skin and discarding the center.
The pineapple won't have its typical tart edge that can make your tongue hurt. Baking mostly eliminates an enzyme called bromelain, which digests the proteins on your tongue.
Heat also softens the pineapple's fibers, making the flesh softer and juicier. You can enjoy this super sweet pineapple on its own, in a dessert, or in a fruit salad.
