For The Crispiest Oven-Fried Fish, Use A Wire Baking Rack

To achieve crispy fish on all sides using your oven, all you need to do is layer a wire rack over a baking sheet and place your filets on the rack.
This method allows the Maillard reaction to occur, resulting in a lighter version of fried fish that doesn't sacrifice any of your textural requirements.
To ensure the best results, pat your fish filets dry and toast your breadcrumbs ahead of time to make the coating as crispy as possible.
Create a wet layer between the filets and the crumbs by mixing a whisked egg with flour and mayo, sour cream, or Greek yogurt to dip your fish in.
Make sure to spray or rub the baking rack lightly with oil before you put on your fish, and thoroughly press the coating into your filets before cooking.
