For The Best Roasting Results, Opt For Thick Asparagus
By MOLLY HARRIS
Many shoppers opt for thin spears of asparagus at the store, thinking they will be more tender. However, thick asparagus shouldn’t just be disregarded as a subpar option.
The primary advantage of thick asparagus is that it can withstand high-heat cooking methods that thin stalks cannot, since they quickly become overcooked and mushy.
Bigger asparagus spears can hold their shape and texture, making them ideal for grilling, sautéing, or roasting, one of the best preparations for this vegetable.
If you’re still worried about thick asparagus being too tough, you can pour a bit of olive oil over the spears before roasting to soften and break down some of their fibers.
