For The Best Roast Chicken Thighs, Break Out The Pizza Stone

Chicken is one of the most popular and versatile meats to cook at home, and while it can be grilled, stewed, or pan-seared, baking chicken is one of the easiest ways to prepare it. However, baking can also lead to inconsistent results, so for most evenly-cooked chicken thighs with a crispy exterior, try using a pizza stone.
Serious Eats uses a hot baking steel or stone – a tool used to produce a crunchy crust pizza – to roast chicken thighs for chicken fajitas. The recipe calls for placing the stone or steel on the top rack of the oven directly below the hot broiler, and a sheet pan is then placed on the steel or stone to absorb the oven’s heat.
The chicken thighs are then placed on the pan, where they'll cook evenly from below and above for about five minutes and will stay moist until they're served. Meanwhile, when roasting a whole chicken, Giordano notes that placing it atop a pizza stone is a great way to ensure even heat distribution and a super-crispy skin.
