Detroit-style pizza is characterized by its rectangular shape, square slices, and Wisconsin brick cheese baked dark and crispy at a high temperature.
Achieving the signature crispy edges that define this pie requires a hot enough oven to get the crust perfectly brown quickly while keeping the crust airy but not dry.
According to Tasting Table recipe developer Stephanie Rapone, the oven needs to be 550°F to get those crispy edges. Cook the pizza for 12-15 minutes.
Toppings and cheese go on the dough before the sauce. Spread the cheese to the edges of the pie before baking so it drips down into the pan, frying the crust in cheesy oil.
