For Splendidly Crispy Yet Tender Green Beans, Roast Them In The Oven
BY AUSTIN HAVENS-BOWEN
Roasting green beans with spices in the oven will caramelize them and enhance their flavors, giving you a crispy yet tender side dish that blows boiled beans out of the water.
While fresh beans produce the best results, you can also roast frozen ones without defrosting them. However, canned green beans can be soggy and don't suit this recipe.
Wash, dry, and trim the beans, then coat them in a high smoke point oil like olive oil. You can keep them simple with salt, black pepper, and garlic powder, or get more creative.
You can use red pepper flakes to add some heat. Fresh garlic, lemon zest or juice, grated Parmesan cheese, pine nuts, or sliced almonds are also great additions.
Place the seasoned green beans on a rimmed baking sheet without overcrowding the pan. Line the baking sheet with parchment paper for faster cleanup.
Roast the beans for 15 to 25 minutes at 400 to 425 degrees F. Make sure they're crisp and caramelized on the outside, then serve them immediately for a smashing side dish.
