For Restaurant-Caliber Steaks, Preheat A Cast Iron Skillet For This Long
BY NIKITA EPHANOV
There are a few ways to cook steak, but at home, a cast iron skillet is ideal for the job. You’ll want to get the pan incredibly hot, so a preheat of 30 minutes is necessary.
A restaurant kitchen range reaches 55,000 BTU, making a preheat extra important. It will provide your steak with an extra caramelized crust and lots of flavor.
It will also cook to completion much faster than in a pan that is not preheated. You’ll know the pan is hot enough when oil starts to smoke as soon as it’s added.
