For Late Brunch Slots, Avoid Hollandaise Like The Plague

There’s nothing like a delicious Sunday brunch, but if you’re craving eggs Benedict and you’ve snagged a late brunch reservation, you might want to re-think your order.
Hollandaise dishes like eggs Benedict are potentially dangerous when eaten later in the day. The sauce is typically made in a large batch and left to sit at room temperature.
Hollandaise uses eggs, and combined with the heat of the kitchen, the sauce can provide bacteria with the perfect environment to grow, increasing the risk of foodborne illness.
Hollandaise sauce is fine to eat within two hours after the restaurant opens. If it’s later in the day, ask if the sauce is made to order, and only order eggs Benedict if it is.
