For Chewy Brownies, All You Need Is One Ingredient Inclusion
BY RYAN CASHMAN
Whether you’re hoping to win a baking competition or simply craving a perfectly chewy brownie, reach for this unexpected ingredient to achieve the best texture.
Sour cream may sound strange to use in a dessert, but the moisture in this dairy product and the lactic acid that gives it its tang can really improve your brownies.
Sour cream will keep your batter moist and help the brownies retain their fudgy consistency in the oven, rather than drying out. However, you shouldn't get carried away.
You should only use about a half cup of sour cream in each batch of brownies. This provides just enough moisture for chewy treats without any "off" tangy flavors.
