Fiocchetti is a pasta shaped like a purse, with the dough gathered around the top and twisted so that the remaining tufts are sticking out.
Thanks to its unique shape, this pasta can be filled with multiple cheeses and sometimes even fruit. While its exact origins are unknown, it may have hailed from Tuscany.
Popular combinations found in fiocchetti include a mixture of ricotta, Pecorino Romano, parmesan, and chopped pears. You can also incorporate mascarpone.
In general, you may love filling these little purses with cheeses like gorgonzola or diced fruit like apple, and topping with sweet ingredients like candied pecans.
