Per Mason Hereford, the chef of New Orleans' sandwich diner Turkey and the Wolf, leaving thick-sliced toasted bread on a wire rack for 30 seconds yields a better toasted sandwich.
Noting why resting bread before using it is crucial, he told Food & Wine, "Because the air is able to go around the bread, it'll have time to cool down so the center won't steam."
A steamy center always results in a soggy, toasted sandwich. However, allowing the toasted bread to cool — and letting the sandwich cool before cutting — can help prevent that.
