Enameled Cast Iron Has One Huge Misconception

Enameled cast iron being nonstick is a common misconception. If you use enameled cast iron as though it were a regular non-stick pan, food will stick to it.
Enameled cast iron can, however, develop nonstick properties when properly used, which is the trick to ensuring the best results. The key steps are preheating and adding fat.
Preheat the pan over medium heat for a few minutes before adding a fat, such as butter or oil. Proper maintenance is also key to preserving the enamel to avoid sticking.
