Elote Fritters Are A Crunchier Way To Relish The Classic Mexican Dish

Elote, Mexican grilled corn with mayo, cheese, lime, and spices, can be transformed into dips, salads, and more. If you want more crunch with your corn, try making elote fritters.
Corn fritters are a staple in the southern United States, and a few modifications give them some elote flair. Start by roasting or grilling the corn instead of boiling it.
Slice the kernels off the cobs if you used whole corn, and prepare the fritter batter according to your recipe. Mix the corn with lime juice, chili powder, and salt and add it in.
Fry spoonfuls of the batter until crisp, then serve the fritters with a dip of sour cream mixed with lime juice, diced red onion, cotija cheese, cilantro, and chili powder.
