Doubling Down On Protein Makes For Very Savory Stuffed Dates
BY EMMA SEGREST
Before you wrap dates in bacon for a tasty appetizer, try scooping out the pits of the fruits and stuffing chorizo into the center for a more satisfying, savory, and exciting bite.
Don't slice the dates too deeply when removing the pit and creating a cavity, or the sausage may fall out. For the chorizo itself, you can use Mexican, Spanish, or any other kind.
After cooking the ground chorizo, drain the grease well to avoid sogginess. Stuff each date with a tablespoon of chorizo, then wrap with bacon and secure with a toothpick.
Cook in the oven until the bacon is crispy. You can also stuff your dates with cubes of cheese for a melty texture, or for a vegan version, use nuts like pistachios or almonds.
You can also use other types of sausage and add fresh herbs inside or on top. A dip like hummus or a roasted red pepper sauce makes your dates even better.
