Don't Underestimate The Power Of Your Blender When Making Lemon Curd

Instead of making homemade lemon curd on the stovetop, try using a high-speed blender, as it generates enough heat to cook the ingredients.
To use this method, add lemon juice, lemon zest, sugar, and egg yolks to your device and blend for five minutes at the highest speed.
Then, reduce the speed to medium, add butter one cube at a time through the lid, and continue to blend. After all the butter is added, blend for 30 more seconds to finish.
Unfortunately, regular blenders aren't quite powerful enough to cook the ingredients the way the stovetop method does, so make sure you're using a high-speed blender.
