Don't Overlook One Important Step When Peeling Garlic
When peeling garlic, let it rest before it goes into the pan with the other ingredients. The enzymes released will interact with oxygen to form beneficial compounds like allicin.
In addition to flavor, allicin is packed with health benefits, such as lowering cholesterol, blood pressure, reducing inflammation, and may even help prevent cancer.
The caveat is that the heat of a hot pan destroys the enzymes that react to form allicin. For allicin to stay intact, let garlic rest at room temperature for 10 to 15 minutes.
