Martinis are then served over the olive-studded cubes to add a fun, unexpected touch. The water helps to balance the drink, while the brine prevents too much dilution.
The extra water also helps ensure that the salty brine freezes solid. Use Castelvetrano olives, which freeze well, complement gin, and have a low salt content.
