David Chang's Unique Preferred Dipping Sauce For French Fries

Everyone’s mind may go straight to ketchup when choosing a dipping condiment for french fries, but Chef David Chang prefers using French au poivre sauce.
Au poivre is actually an ingredient in steak au poivre, and since the dish is often served with fries, it’s no surprise that the sauce pairs well with both foods.
Au poivre sauce contains peppercorns, heavy cream, butter, shallots, and liquors like cognac and brandy. You could also include chicken stock or even mustard.
To really make the most of your au poivre sauce, it’s important to perfect your fries. Try experimenting with air-fried fries or a twice-fried technique.
