Cottage Cheese Is Just A Pasta Sauce You Still Need To Dilute

Cottage cheese’s slightly salty flavor and loose consistency makes for a surprisingly delicious cheesy pasta sauce. However, it needs some help to achieve the right texture.
To turn cottage cheese into a creamy sauce, blend it in a blender or food processor with evaporated milk and starchy pasta water, which will create rich and velvety consistency.
You can further enhance the sauce’s flavor with a pinch of nutmeg, paprika, or garlic powder, Dijon mustard, or fresh peas. These additions won't overwhelm the cheese itself.
Cottage cheese sauce can even act as a protein-packed alternative to Alfredo sauce. A 50/50 mixture of cottage cheese and evaporated milk is a good measurement guideline.
