Cornstarch Is The Secret Ingredient For Rich And Thick Hot Chocolate
BY STEPHANIE FRIEDMAN
To replicate the thick and creamy goodness that is Italian hot chocolate, all you need is cornstarch. It is a thickening agent that disintegrates and bonds with water.
Cornstarch won't taint hot chocolate's taste, as it doesn't have much flavor, so it will only contribute its thickening properties. Use it in any homemade hot chocolate recipe.
If you're going to use this method, make your hot chocolate from scratch. Whisk it into a few tablespoons of milk and set it aside while you warm up the other ingredients.
Once it’s simmering, whisk in your starchy mixture and let everything thicken. Avoid boiling for longer than two minutes, as this can cause cornstarch to reverse its effects.
