Combine Mushrooms And Chickpeas For Delicious Vegetarian Burgers

If you miss biting into a savory, juicy hamburger but don't miss the meat, mushrooms and chickpeas are the perfect alternative.
Portobello mushrooms have a meaty, rich flavor that makes them a great choice for veggie burgers. Enhance their flavor by chopping them into fine pieces.
Then, sauté them in olive oil with salt, minced garlic, onions, thyme, and oregano. Once the water releases and dries up, set the mushrooms aside.
Drain and rinse a can of chickpeas and season them with salt, coriander, and rosemary before sautéing for 10 minutes. Then, mix them with the mushrooms and mash them together.
Typically, a whisked egg binds the mix, but cooked quinoa or chickpea flour can be alternatives. Add some breadcrumbs can for extra crispiness.
After the chickpeas and mushrooms have been blended, shape your patties. Heat oil in a skillet and cook each side of the patties for about four minutes each.
