Cold Leftovers Make For The Perfect Fried Mashed Potato Balls

Leftover mashed potatoes can be turned into potato croquettes by mixing them with a few extra ingredients, rolling them into balls, coating them in breading, and frying them.
The only tricky part is that the potato mixture can be sticky. When the mash is cold, it holds together better, so keep it cool as you roll the croquettes to prevent sticking.
You should also prep all the other ingredients before pulling your mashed potatoes out of the fridge, and form the croquettes as fast as possible before the spuds warm up.
After adding cheese, herbs, bacon, and whatever else you like to the mash, stir the potato mixture with a spoon, and use an ice cream scoop to make evenly-sized balls.
Dust your hands with flour while rolling the croquettes for a neat finish. Once rolled in breadcrumbs and deep-fried, these delectable treats are ready to enjoy.
