Chimichurri Is The All-Around Salad Dressing You Never Knew You Needed
BY TOM MAXWELL
Chimichurri, with its zingy, herbaceous flavor, is an unbeatable condiment for steak and chicken. If you can’t get enough of this green sauce, try using it as a salad dressing.
Chimichurri is typically made with red wine vinegar, olive oil, cilantro, garlic, and spices like oregano, cumin, red pepper flakes, and salt.
You can tailor the sauce to match the ingredients in your salad, whether by swapping in parsley for cilantro or adding paprika instead of red pepper flakes.
Quickly whip up your sauce by chopping everything except the olive oil in a food processor, before slowly drizzling in the oil to create a thick, creamy emulsion.
Try chimichurri on Cobb salad, a salad topped with steak, or a bowl of sliced cucumbers and cherry tomatoes. It will last for almost a month in an airtight container in the fridge.
