Cauliflower Supplies A Creamy And Nutritious Boost To Potato Soup

As colder weather approaches, soups become a go-to meal. If you’re craving potato soup and want some extra nutrients to stave off colds, give it a boost with cauliflower.
Featuring heavy cream and few veggies, potato soup isn’t the most balanced meal. Cauliflower can add both nutrients and a rich mouthfeel, letting you use little to no cream.
Boil the potatoes with stock and whichever other ingredients your recipe calls for, then add chunks of cauliflower once the potatoes start to soften.
Once the veggies have all softened, use a blender to puree the mixture into a thick, creamy soup. The cauliflower will add a hint of sweet flavor and extra body to the broth.
