Caramelize Canned Pumpkin For Richer, Delectable Pies This Fall
BY STEPHANIE FRIEDMAN
There are plenty of ways to improve your pumpkin pie, including caramelizing your pumpkin puree. This technique brings out the sweetness in pumpkin for a less one-dimensional pie.
Simply pour your puree from the can into a pan, heat it on the stove, and keep stirring until it turns a little darker in color and smells sweet, nutty, and fragrant.
If you use a liquid sugar like maple syrup in your pie recipe, you can add it to the pumpkin while it's on the stove. The caramelization process should take no more than 10 minutes.
You can also use an Instant Pot to cook the puree. Pour your canned pumpkin into the pot with some butter and let it pressure cook on high for 20 minutes.
Once it's caramelized, finish your filling by mixing the pump with sugar, spices, and whatever else you please. Your already-stellar pie recipe will be much improved.
