Canned Chicken Is Your Go-To For Easier Enchiladas
BY JOHN TOLLEY
Making the perfect enchilada can be a labor-intensive endeavor, but you can save some time and effort by using canned chicken instead of cooking it from scratch.
Canned chicken is nothing more than white breast meat that is cooked, shredded or cut into chunks, and packed with salt, water, and chicken broth to help it stay moist.
All you have to do is add the chicken directly to your enchiladas. Canned chicken is also a blank canvas, which means it can be seasoned to match flavors of your recipe.
Start by sautéing your favorite vegetables, then drain canned chicken and add it to the veggies. You can add seasonings you like, such as cumin, oregano, and chili powder.
You can enhance the filling by mixing it with your favorite enchilada sauce or salsa. Your enchiladas have perfectly tender chicken in a savory sauce, in far less time than usual.
