Brown Sugar Is The Sweet Addition You Need For Moist Chocolate Cake
BY KAT LIEU
Due to the addition of cocoa powder in the batter, chocolate cake can sometimes come out of the oven dry and crumbly. Thankfully, brown sugar can be added to up the moisture.
Brown sugar is pretty hygroscopic, which means it can absorb moisture in the batter and retain it during baking rather than drying out the cake like cocoa powder does.
Incorporating this ingredient can also lend delicious caramel undertones to the cake. Just try not to add extra wet ingredients, such as more oil, milk, or eggs.
