As the sauce cooks on the stove, its natural sugars will caramelize as the Maillard reaction kicks into gear, creating a fragrant, thick, and delicious pasta companion.
Excess water will cook off and the flavors of the tomatoes will concentrate and rise to the surface. More flavor is released via residual heat even after the burner is turned off.
The longer you let your sauce rest after cooking, the more flavorful it will become. Extra fixings are always welcome, but a bit of patience is all you need for better sauce.
