Boost Mushrooms By Marinating Them In Maple Syrup

While it may sound odd, mushrooms and maple syrup are a match made in heaven. Next time you reach for some fungi, elevate their flavor with a maple syrup marinade.
Maple mushrooms are the ideal mix of savory and sweet, with the woodsy maple syrup caramelizing the meaty mushrooms for a complex and umami-heavy dish.
Any syrup and any mushroom pairing will work, but lighter syrups pair best with mild button mushrooms, while darker syrups pair with gamey maitakes or earthy king oysters.
You can marinate your mushrooms raw or boil or blanch them first if they're tough. After boiling, cut them up if you'd like and then prepare your marinade.
For your marinade, whisk together olive oil, a bit of vinegar or lemon juice, a healthy glug of maple syrup, and aromatics like garlic, shallots, chili flakes, or herbs.
Once sauteed, roasted, or however else you cook them, your mushrooms can be served with steak, burgers, pizza, crostini, charcuterie, inside a grilled cheese, or tossed with pasta.
