Bacon 'Bread' Is A Savory Alternative To Upgrade Your Sandwiches
BY PEGGY AOKI
For a low-carb and protein-rich bread alternative, consider weaving strips of raw bacon together and cooking them until crisp to create a versatile bacon lattice.
The dense and crunchy layer of bacon can hold up to warm and weighty fillings, like melty Swiss cheese and grilled Portobello mushrooms. It’s also a good burger bun substitute.
For a crispy bacon lattice, use thinner bacon. Heat the oven to 375°F, place a wire rack on a baking sheet, and halve the bacon before laying three half-strips next to each other.
Then use three more strips woven over and under the first strips to create a square. Cook the bacon on the wire rack for 12-15 minutes until it becomes crisp and brown.
Oven-baked bacon will also give you the gift of rendered bacon fat, which you can use to make your own mayonnaise for your sandwich.
