Armadillo Eggs Are The Texas Dish That Will Wow Guests At Any Party

Armadillo eggs are a fancier version of the jalapeño popper, as jalapeños are stuffed with cream cheese or cheddar, wrapped in bacon, then baked, broiled, or grilled.
Some like to take the cheese stuffed pepper, wrap it in uncooked sausage and breadcrumbs then fry it, like a Texan version of a Scotch egg.
The exact origin of armadillo eggs is contested, but some say the recipe was created in Lubbock at Texas Tech University, while others claim it emerged at an armadillo festival.
When the bacon wraps around the jalepeño, it resembles an armadillo shell, and when enveloped in sausage, the shape is similar to an egg.
