An Ice Water Bath Is Key For The Crispiest Fried Chicken Ever

For super crispy fried chicken, soak the chicken in an ice water bath prior to the dredging and breading process. The cold liquid will firm the meat and keep it moist.
The ice-cold skin will also make sure your breading stays on during the frying process. When it hits the hot oil, any moisture will evaporate, resulting in crispy chicken.
For the ice water technique, start with two quarts of ice water for every eight pieces of chicken. In a large bowl or sealable bag, combine the water with seasonings and herbs.
The seasonings will infuse the poultry with flavor. Allow the chicken to sit in the water for two to four hours before removing it, patting it dry, and continuing with the recipe.
