Alton Brown Prefers One Cheaper Cut Of Beef Over Prime Rib

When Tasting Table sat down with Alton Brown, creator and host of Food Network's "Good Eats,” he offered up a cheaper, taste-bud-satisfying prime rib alternative: choice rib roast.
"I think it's meatier," he said, referring to the mildly lower fat content associated with choice ribs. A choice rib roast should be seven to 10 pounds and have three to four ribs.
Prime grade beef comes from well-fed young cattle. With abundant marbling, prime cuts are used for dry-heat cooking and favored for restaurant use, which is why they're so pricey.
Choice grade beef also carries a high-quality designation, with only slightly less marbling, and choice cuts from the rib will be nearly as juicy and tender as prime cuts.
