Alton Brown Knows How To Evenly Cook Over-Easy Eggs Every Time

Alton Brown's key tip for perfectly cooked over-easy eggs is to crack them into a small bowl before transferring them to a preheated pan with melted butter.
Essentially, this technique allows Brown to pour and place his eggs directly and methodically. Plus, it minimizes the chance that any eggshells will wind up inside the pan.
Brown then pre-heats his pan — specifically, an eight-inch nonstick — over low heat. As the pan warms, he melts a tablespoon of butter and adds the eggs once it melts.
This low and slow approach prevents uneven cooking, resulting in perfectly cooked eggs on both sides. Once done, season with salt and pepper, and they're ready to enjoy.
