Alton Brown Has One Rule For Purchasing Canned Sardines

Alton Brown is a huge fan of sardines, and if you’re curious about but not familiar with these tiny fish, the celebrity chef has a tip for picking the best kind.
According to Brown’s 2016 cookbook, “EveryDayCook,” you should skip buying sardines packed in water and instead opt for those packed in oil.
The oil-packed sardines will have more flavor since the oil locks in the fishes' moisture, while water which will dilute their flavor in comparison.
The olive oil also helps to temper the sardines’ natural oils so they’re not overly fishy. Brown recommends using them in dips, spreads, sandwiches, and on toast.
