Aloo Palak Is The Spinach And Potato Curry Everyone Needs To Try

If you’ve just transitioned to a vegan or vegetarian diet and are in need of a spicy and flavorful go-to dish, aloo palak is just the dish for you.
The stars of this simple spicy dish are potatoes (aloo) and spinach (palak). The basic recipe combines them with garlic, ginger, onion, tomatoes, and a variety of spices.
This dish is often served with rice or bread. It has its origins in parts of northern India and Pakistan and is still enjoyed in those regions, as are many potato-based curries.
To make it from the comfort of your home, you’ll need onion, chilis, ginger, garlic, tomatoes, potatoes, spinach, salt, cumin, chili flakes, and garam masala.
Recipes vary widely, but you typically sauté the onion, garlic, tomatoes, and spices, then stir in the pre-boiled potatoes followed by the chopped spinach.
The potatoes are traditionally cooked within the curry and it requires adding water. You can also blend the spinach and add fresh lemon and fragrant spices like fenugreek.
