Alex Guarnaschelli's Go-To Crostini Makes Entertaining Easy

If you find yourself entertaining guests and want a quick, no-fuss way to feed them, there's nothing easier than crostini. When it comes to making these delicious little toasts, chef Alex Guarnaschelli has a favorite recipe that delivers on flavor and texture, featuring simple ingredients you might already have in your fridge.
In her recipe for Brie Crostini with Pepper and Herbs, Guarnaschelli suggests tops toasted bread with creamy brie cheese, followed by fresh herbs, black pepper, and a light dressing. For the dressing, the chef mixes three tablespoons of olive oil with two tablespoons of red wine vinegar and one tablespoon of Dijon mustard.
Guarnaschelli prefers to add parsley and tarragon to the bread — you can also use other herbs like a chiffonade of basil or sage — before topping the cheese with the dressing. She recommends popping the crostini in the oven to melt the brie, but if you're in a rush, the snack can be served at room temperature as well.
