Tomatoes are one of the best ways to upgrade grilled cheese sandwiches, but since they’re likely to make the bread soggy, craft your sandwich open face.
The issue with tomatoes is that they release more juices as they cook. Crafting your sandwich open face at first lets the cheese melt so the tomatoes don’t cook as long.
Start by cooking your sandwich open face, which will allow the cheese to begin melting without sealing the sandwich with a top layer. Add the tomatoes after the cheese melts.
You can also pat dry the tomato slices with a paper towel before using. Once the cheese has melted on both slices, add your tomatoes, seal the sandwich, and enjoy.
