Add Hard-Boiled Eggs To Loaded Sweet Potatoes For A Breakfast Spin

A sweet potato can make for a quick breakfast, but it becomes more filling and delicious when topped with a hard-boiled egg or baked with an egg cracked into the center.
You can reheat leftover sweet potatoes and top them with a boiled egg, or cut a potato in half, scoop out some flesh, crack an egg into the hole, and bake the whole thing.
When loaded up with salt, pepper, paprika, or fresh herbs, these meals will have you leaving the breakfast table feeling like you can take on the day's activities.
You can also make sweet potato omelets, frittatas, or scrambled eggs, or even two-ingredient sweet potato pancakes paired with over-easy eggs for a bigger breakfast.
