Singapore-based chef André Chiang is the big name behind this tiny restaurant, but day to day, Vincent Crepel is in the kitchen turning out memorable French-Asian fusion platings. It's hard to forget their dish of foie gras mousse covered in earthy mushroom consommé that was paired with a deep-fried rice flour brioche. It almost resembled a doughnut. The modern decor with corset-inspired chandeliers is playful, as are the knowledgeable staff.
