Luke Williams, a former cheese maker-turned-monger and self-confessed curd nerd, sells fudgy Gonedsa; creamy-but-complex Gouda; and oozy, belly-ing Karoo Ash. The local to international ratio here is 80 to 20. And the fermentation lab downstairs produces the four k's: unpasteurized kraut, kombucha, kimchi and kefir.
