When your family's been in the barbecue business for as long as you've been alive, you're either gonna run away squealing or go whole hog. Rodney Scott opted for the latter. And though most of the shops in his region have switched to gas-fueled pits, this pitmaster still insists on felling and splitting the wood used to cook his signature pigs himself. That distinctive flavor (and Scott himself) is so beloved and essential to barbecue culture that when the restaurant's main pit room burned down in 2013, a group of fellow chefs organized a multicity Rodney in Exile tour to fund its rebuilding.
