Shaved Broccoli Stalk Salad with Lime and Cotija
Recipe adapted from Root to Stalk Cooking, Tara Duggan (Ten Speed Press)

3 broccoli stalks with leaves (florets removed and saved for another time)
1 tablespoon extra-virgin olive oil
1½ teaspoons fresh lime juice
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
¼ cup crumbled cotija or feta cheese
1. Separate the broccoli leaves from the stalks and set aside. Trim the base of each stalk and then use a chef's knife to trim the skin from the stalk, creating a long, skinless baton. Lay the baton flat on the cutting board and use a vegetable peeler to shave the baton into thin ribbons.
2. To a medium bowl add the shaved broccoli, broccoli leaves, olive oil, lime juice, salt and pepper. Toss to combine, add the cotija and stir to incorporate. Serve immediately.
